Cauliflower and greens patties

A quick, easy, healthy and nutritious meal from Michal's table that comes together in minutes.

 

Green patties with cauliflower and swiss chard

Ingredients:

½ medium cauliflower

4 spring onions

1 garlic clove, minced

½ bunch of parsley

½ bunch of coriander

A few sprigs of thyme

3 leaves of Swiss chard, green parts only

2 eggs

½ tsp turmeric

¼ tsp nutmeg

¼ tsp ground coriander

Salt, pepper

5 Tbs chickpea flour

Olive oil for frying

Preparation:

Pulse cauliflower in a food processor,  add greens, then eggs and seasoning, and pulse until well combined. Avoid overworking the mixture.

Add flour to the mixture and mix until incorporated. If the mixture is too wet, add a bit more flour.

Heat olive oil in a skillet, make patties and fry until golden, flipping sides after a couple of minutes.
